Holding the knife with your other hand, position the blade perpendicular into the groove with the white coarse wheel and move back and forth. Repeat with the pink finishing wheel. No heavy pressure is necessary. After sharpening, hand wash knife in hot water and dry completely. The ceramic sharpening wheels are less abrasive than electric sharpeners. Plus its easy and quick to use. This sharpener can be used on both Japanese and Western knives.
